Brazilian Churrasco-Style Picanha

Skewer thick slices of Picanha with the fat cap intact, season with sea salt, and grill over an open flame until crisp and juicy. Slice thinly and serve immediately.

Drink Pairing: An Argentinean Malbec or a smoky Brazilian-style Caipirinha.

Reverse-Seared Wagyu Picanha

Slowly roast in the oven at a low temperature until medium-rare, then sear in a cast-iron skillet for a crispy crust. Slice against the grain for the best texture.

Drink Pairing: A full-bodied Cabernet Sauvignon or a rich Stout.

Garlic Butter Wagyu Picanha Steak

Sear Picanha in a hot pan with butter, garlic, and thyme, basting continuously for deep flavour. Serve with grilled asparagus or crispy potatoes.
