The Wagyu Hammer Shank, also known as a ‘Caveman’s Lolipop’ is cut from the rear leg and perfect for long slow cooking (5-8 hours) whether thats slow roasting or in a smoker.

Wagyu Hammer Shank Cooking Instructions

We do not recommend using an Air Fryer or Microwave for this product.

Best defrosted overnight in the fridge (once defrosted, eat within 48 hours). To cook our ready meals from frozen, defrost in the microwave before following the heating instructions. Do not defrost meat products in the microwave.

Oven

Preheat oven to 160c. Place shank in suitable pot, the Raro Dutch Oven is a great suggestion here, and add Sloane’s Red Wine Jus and top with water to cover the joint. Slow cook in the oven, with the lid off, for 4-5 hours. When you notice the liquid reducing back to the original quantity of jus, place the lid on the pot (or cover pot with tin foil) to retain the moisture. When falling apart, remove pot from the oven, and let sit, covered, for 10 minutes.

Stove/Hob

We recommend using an oven for temperature stability. However, it is possible, with decent care, to replicate this on a stove top using a low heat. Place shank in suitable pot, the Raro Dutch Oven is a great suggestion here, and add Sloane’s Red Wine Jus and top with water to cover the joint. Slow cook on low heat with the lid off for 4-5 hours. When you notice the liquid reducing back to the original quantity of jus, place the lid on the pot (or cover pot with tin foil) to retain the moisture. When falling apart, remove pot from the stove, and let sit, covered, for 10 minutes.

Slow-Braised Wagyu Shank with Red Wine Jus

Braise the shank in red wine, beef stock, and aromatics (garlic, rosemary, thyme) for 4-5 hours until fork-tender. Serve over creamy mashed potatoes with a drizzle of the rich, reduced jus. Alternatively simply use Sloane’s Red Wine Jus with enough water to cover the meat at the beginning of the cooking, tent with foil (or pot lid) when the liquid has reduced back to the original quantity of jus.

Drink Pairing: A bold Cabernet Sauvignon or a dark, malty stout.

Osso Buco-Style Wagyu Shank

Prepare the hammer shank osso buco-style, slow-cooked with tomatoes, white wine, garlic, and herbs. Serve with saffron risotto or polenta to soak up the sauce.

Drink Pairing: A classic Chianti or a full-bodied Zinfandel.

Barbecue-Glazed Wagyu Hammer Shank

Smother the shank in a smoky BBQ glaze and slow-cook or smoke it until tender. Finish with a caramelized glaze under the broiler and serve with coleslaw and cornbread.

Drink Pairing: A hoppy IPA or a glass of Zinfandel.
