Saltara Thera, an alpine-style cheese, is a homage to the timeless traditions of mountain cheesemaking. Crafted in a copper cauldron from 105 litres of milk, this cheese embodies its high mountain origins, offering a semi-elastic texture peppered with sporadic holes reminiscent of the best alpine cheeses. Its flavour profile, of earthy and nutty notes, is subtly enhanced by a natural smokiness, a characteristic that distinguishes Saltara Thera from its counterparts.

The dedication invested in Saltara Thera is evident in its rind, washed weekly to encourage the development of a robust, meaty flavour that deepens as the cheese matures. This meticulous process, inspired by the heritage of celebrated alpine cheeses like Bergkäse, Appenzeller, and Gruyère, results in a cheese that is not only a delight to the palate but also a homage to the cheesemaking art.
