Base Fat
With its high smoke point, excellence at carrying flavour, super low GI and improved texture, there is little reason to use much else in your kitchen. You’ll use less and enjoy your food much more.
Baking Fat
Lard has long been used to replace butter and oils in baking. This English scone recipe is the perfect example of how this can work. For the curious, try her Steak and Kidney Pudding. This is one that WILL reward the brave. Pastry is simply lighter with a little lard in the mix.
Basting Medium
When making pastes for rubbing on meat, replace the oil with lard. You’ll enjoy a far more satisfying crust and a better finish all round.
